Mushrooms are full of antioxidants that may have anti-aging potential

Mushrooms have more ergothioneine and glutathione together than any other food. Both of these are important antioxidants that previous research has linked to anti-aging treatments and strategies. Researchers are also exploring whether the antioxidants play a role in brain health.

Fungus gnats can zero in on the aroma of a particular fungus in a heap of compost. They also have a voracious appetite for the tender mushrooms that contribute $2 billion to Pennsylvania's economy each year. Entomology grad student Kevin Cloonan is developing ways to turn their exquisite sense of smell against them.

Washing mushrooms stalls germs, extends shelf life

A two-step process of washing harvested mushrooms greatly inhibits the growth of food-borne pathogens and extends their shelf life, according to Penn State food scientists. They studied how washing affected the survival of food-borne pathogens such as Listeria and Samonella in whole and sliced mushrooms.

Pennsylvania grew 355 million pounds of button mushrooms—$274 million worth—during 1994-95, according to the Pennsylvania Department of Agriculture.

But many mushrooms became brown and spotted before making it to the soup pots and salad bowls of American homes. Those unsightly mushrooms headed to the cannery—resulting in lost profit for growers and less produce for consumers.
