Two on-campus dining commons to offer gluten-free choices

August 25, 2008

University Park, Pa.— Starting this fall, Pollock and Findlay Dining Commons will be offering gluten-free items for breakfast, lunch and dinner.
By offering this option on campus, University students can have a close and convenient location to find gluten-free foods. Many people who have certain dietary conditions must strictly follow gluten-free diets. The gluten-free products do not contain wheat, barley, rye, and/or other gluten-contained cereals. They also do not contain gluten as a food additive.
The number of students who suffer from celiac has increased over the years and “we felt it was important to provide more food choices for these students,” Director of Residential Dining Lisa Wandel said.
The daily menu will be by request only. Interested students are encouraged to alert a commons employee at the serving line of their request. Once the student is familiar with the gluten-free menu, he or she may contact the dining commons 15 to 30 minutes before arriving for their meal, to shorten their wait time while the food is being prepared.
Some of the á la carte menu items include:
Breakfast: Gluten-free pancakes and rolls (for breakfast sandwiches).
Lunch and Dinner: Hamburger buns (for burgers and sandwiches), pasta and sauce, soup, pizza, and chicken breast
Dessert: Gluten-free chocolate chip cookies and brownies
"Our goal is to increase and enhance the options available to these students with diet restrictions," Wandel said. "We're always trying to find ways to provide a variety of selections and create the best dining environment for our students. By offering gluten-free items, we can cater to the students that require this kind of diet."
